Shio koji is a Japanese UMAMI, an ancient all-purpose seasoning that can be used to marinade food, tenderise protein, and season food. It is considered to be a health food product as it is fermented for over a month, providing multiple vitamins, folic acid, boosting immunity, and contains probiotic bacteria that cleans the digestive track. Hand-made, this recipe has been passed down from my grandmother from the Nagano prefecture in Japan.
