Spelt Flour Spelt is an ancient grain that has become well recognised for it's health benefits. Distantly related to wheat, Spelt is recognised as one of the earliest cereal grains cultivated by man. It is a highly nutritious grain with a distinctive nutty flavour. Requiring de-hulling to remove a hard outer shell the grain is then ready to be milled in the same manner as Wheat and Rye. Spelt is another ancient grain that is the same family as today's wheat and oats but has very different properties. For instance, spelt is a softer gluten grain that is gentle to the digestive system. The Spelt Grain (also known as Dinkel, Farro, or Asturia)contains less of the proteins that cause the symptoms of coeliac disease. Although a diagnosed coeliac could not use Spelt as an alternative to today's wheat and oats(and nor would anyone seriously ill attempt to try new dietary regimes without consulting their doctor etc.), however, many allergen sensitive people do find these ancient grains can be tolerated. The nutty flavour of the spelt grain is said to contain the anti-oxidising properties for the body. Spelt flour Notes: Spelt flour contains gluten, but it's tolerated by many people with gluten allergies. If making bread with spelt flour, don't knead it for as long as you would a wheat bread--its gluten isn't as durable as that in wheat. Freeze any spelt flour that you're not planning to use right away. Substitutes: kamut flour (like spelt flour, kamut flour is tolerated by most people with wheat allergies and is good for making bread and pasta) Synonyms: farro = dinkle = German wheat

About Powlett Hill

The property has been farmed by the Fawcett family since 1865. Andrew 4th and Ben 5th generation along with their family's all contribute to a busy and productive farm. Powlett Hill is situated at Campbelltown Victoria. The area is a rich volcanic region with a long farming history. Farming here has been based around wool production with increasing cereal cropping and prime lamb production in recent times. In the year 2000, dissatisfied with conventional farming we adopted Bio-Dynamic farming methods, the change was quick to take hold, improved soil structure was clearly visible, increasing humus, generating healthier pastures and soils. The 1200ha property is fully certified with Demeter, producing fine wool, prime lamb, milling grains Wheat, Rye, Spelt and Khorasan. All flour milling is all done on farm.
