When it’s produced in accordance with organic principles we can be satisfied that it is as pristine as it can be. We love how it is always a little bit different from one batch to the next, and its varying shades and tastes and textures. If you prefer your honey runnier, go for our Organic Honey which has been heated up to 45 degrees to maintain its clarity. Our organic honey is heated to a maximum of 45degrees Celsius to clarify and liquefy it; low temperatures help preserve honey’s natural enzymes and health giving properties. This honey too will candy over time. This can easily be changed by placing the jar in the sun, in front of a heater or in warm water. Lately, we've been getting a few questions about our honey. Questions like "do you cold extract your honey?" and "how much sugar do you add to your honey?" Well, we do "cold extract" our honey; that means it is taken from the hives and out of the frames with no heat applied. Applying heat makes the honey runnier and easier to extract. Our raw organic honey has no heat applied at all....we need a special very old fashioned bottler to place the thick, candying honey into jars. This way, the honey stays as natural as we can get it. Our organic honey is cold extracted. Because it candies quickly, it needs to be heated again to liquify it for bottling. Heating is limited to 45 degrees Celcius - less than the temperature the hive generates in summer. ..and no. We do not add sugar or anything to our honey. About Ambrosia

The story of Ambrosia honey goes way back to 1919 when Arthur French returned from the trenches of the Somme and started keeping bees at his new farm at Soldier’s Settlement, NSW. It was here that Arthur’s son Jack developed his love of beekeeping. Fast forward 50 years or so and, having followed a long career in engineering, Jack returned to apiculture. And in 1979, together with his son-in-law Brian Tanis, he founded Ambrosia Apiaries. At Ambrosia, we are passionate about the benefits of pristine, honey produced in accordance with organic principles. In fact, Ambrosia was the first Australian company to seek and gain organic certification in 1989. We are a growing 100% Australian owned family company with two generations worth of experience in producing top class organic honey.
