Buttermilk used to be produced from the liquid that separated from the cream during butter making. This buttermilk is made by culturing the milk with cultures used for cheese making. The buttermilk has a creamy consistency and a mild flavour similar to natural yoghurt. Buttermilk is a versatile product. It can be used in savoury or sweet applications. In Europe it is typically used in baking and cooking. In America it is widely used for marinading meats prior to cooking. It is pleasant to drink or use on cereal or muesli for breakfast. It can be used in place of milk in baking – add ½ teaspoon of baking soda for every cup of buttermilk used to neutralise the acid in the buttermilk.
